Vegan Meringue with aquafaba powder

Making Vegan Meringues is not difficult, but try to stick to the recipe as strictly as possible.

  • preheat your oven to 80°C
  • Make the cup or bowl in which you will be mixing grease-free with some lemon juice
  • add 100 ml of aquafaba solution to the bowl
  • mix 4 minutes (thermomix: butterfly, setting 3.5)
  • add 1 teaspoon of lemon juice (for more firmness)
  • mix 1 minute
  • add 50 g icing sugar (very slowly, spoon by spoon)
  • add 50 g granulated sugar (very slowly, spoon by spoon)
  • in the meantime, keep mixing
  • put the mousse in a piping bag
  • pipe beautiful meringues on baking paper
  • put in the oven for 1.5 h
  • Turn off oven and let cool for another 1 hour
  • store in a closed container, otherwise the meringues will become soft again
